A distant cousin of spinach and a relative of amaranth and quinoa, this plant is highly ornamental and great for edible landscaping. The edible arrow-shaped leaves are a lovely fuchsia c. Prepare as spinach — young leaves raw in salads and cook the mature leaves. The flavour is sharp with subtle salty overtones. Since it can handle the heat, you can harvest long after the spinach is done.
