A member of the Endive family that is also known as Italian chicory. A leaf vegetable that produces deep red leaves that form into a tight compact head. The leaves have a bitter spicy flavor that mellows when roasted or grilled in olive oil and served hot with balsamic vinegar. Cooking remmoves the bitterness and brings out the sweet flavor.
